Wine description: Concentrated aromas of mandarin, pineapple, lime apricot and dark wet slate—pure minerality
Location: Edelschuh: From this historical vineyard, which was already referred in 1322 as one of the best single vineyards, we get very mineral driven wines with outstanding ageing potential. Through the high sea altitude we are able to pick very ripe grapes, which still have a very good acidity structure. Through the extreme steepness of up to 90% we are just able to work by hand or with rope winch machines. The very meagre slate soil is very much reflected in the wines.
Soil: Red and blue-black slate (paleozoic slate)
Winemaking: Very late selective hand-picked without Botrytis, the whole grapes were crushed, after a few hours the whole grapes were gentle pressed, spontaneous fermentation in old 600 l casks, ageing on the yeast for 16 months.
